a bit of basque




a simple but delicious recipe and, best of all, it can all be cooked in one pot, perfect for entertaining. want wine (and who doesn't?) try this - las rocas from calatayud, spain, a real good wine for not a lot of dosh. enjoy.

it's not too unhealthy. i fried the chicken quickly to brown it all over and then finished it off in the oven as i don't like it to be too greasy. the chorizo is pretty fatty but it has such a good flavour, you could use less of it of course. i used brown basmati rice which tripled the cooking time as it must take at least 2 1/2 hours to cook it this way, be warned
